Korean Stews — Kimchi, Soft Tofu, Army
The stews that anchor a Korean table. Our kimchi jjigae is built on aged kimchi and pork belly, slow-simmered in rendered pork fat; the sundubu jjigae is soft tofu in a brick-red gochugaru broth finished with raw egg; and budae jjigae (army stew) stacks spam, sausage, noodles and kimchi into a spicy midnight bowl.
All stews are cooked with butter, ghee and pork fat — no canola, soybean or sunflower oil. Delivered hot with rice and banchan.
