Korean fried chicken is usually cooked in cheap seed oils. Ours isn’t. We fry in rendered beef tallow and ghee — the way it was done in Seoul before commercial oils arrived in the 1970s. The result: cleaner flavour, crisper crust, and the same shatter-shiny finish you’d get at a Seoul fried-chicken counter.
