Drop a slice of marbled belly into a simmering pot and it surrenders its fat into the broth, going pale and tender and faintly grey. The hundred-degree ceiling
Water is the quiet saboteur of flavour. At normal sea-level pressure it cannot get hotter than 100°C; as long as food sits wet, evaporation pins its surface at roughly that temperature no matter how hard the burner roars. Steaming, boiling, poaching, braising — every wet method runs into the same ceiling. The food cooks through, but the surface never climbs high enough to brown.
Browning has a known doorway. The Maillard reaction — the cascade of sugars and amino acids that builds roasted, savoury, crusted flavour — proceeds rapidly only between about 140°C and 165°C, well above the point where water boils away. Below that threshold you get tenderness without colour. Above it you get the crust. A wet surface can never reach the doorway, because the water leaves first.
Wet heat produces stew. Dry heat produces sear. A Korean grill chooses the second on purpose.
Why the grate stays dry
This is the whole logic of cooking over open coals rather than in a pan of liquid. The grate is engineered to keep the meat’s surface arid: fat drips away through the bars instead of pooling, radiant heat hits the surface directly, and the moment the surface dries it is free to race past 100°C toward the Maillard band. The char marks are not decoration. They are physical proof the surface broke the water ceiling.

A grill is not a hotter stove. It is a drier one — and dryness, not raw temperature alone, is what lets the surface cross from stewed to seared.
The choice on the plate
Understanding the ceiling explains a few things that look like cook’s intuition. Patting a cut dry before it touches the grate is not fussiness; it is removing the water that would otherwise hold the surface at 100°C. Crowding the grate drops the temperature and traps steam, which is why a busy grate browns worse than a patient one. The grill earns its crust by refusing to steam.
