Charcoal For Korean BBQ: Binchotan vs Lump Heat

Before a single slice of belly hits the grate, the meal is already half-decided. The charcoal underneath is not fuel. It is the first ingredient.

Cooks talk about cuts, marinades, and resting times. Far fewer talk about the black or white lumps glowing beneath the grate, even though they set the temperature, the evenness, and the char long before anyone reaches for the tongs. One is purified almost to bare carbon; the other still carries the memory of its tree.

Binchotan settles into a long, flat plateau — measured at close to 700°C in side-by-side tests and holding it for five to eight hours with almost no smoke. Why the curve matters at the table

A steady plateau is what lets a thick cut form a crust without scorching, because the heat penetrates instead of slamming the surface. The wood underneath, in other words, decides how forgiving the grill is to the person standing over it.
